Marcato's recently updated Marga Mulino flaker has been on the market for several years, and is one of the better-known flakers on the market. Marcato describes it as a flour mill as well, but in our view it really isn't practical at all as a flour mill because the effort level is very high, the process is slow (requiring multiple re-grinds), and the flour produced is very coarse. We can recommend it as a grain grinder only if your requirement is for a coarse meal texture, not flour—and even then, in our opinion there are much better choices for meal or flour.
What we can recommend the Marga for, is flaking grain. The six-position adjustability of its roller gap lets you select a setting perfect for your flaking needs, and the Marga maintains consistency of flake thickness and size as well as, or better than, any home flaker we've seen. The frame of the Marcato Marga Mulino is heavy duty chromed steel and the rollers are anodized alloy. The flaker is held in place with an included table clamp.

A variety of other grains can be flaked with the Marga flaker, including wheat, rye, barley and millet, with a little preparation. These grains are normally dry and hard. To soften them, hold them under running water briefly in a strainer. Then spread the grains on a cloth or towel to let them dry over night or for at least 3-4 hours. This time will vary depending on the grain used, but a little experimentation will help optimize the process. The softened grain will flatten nicely into flakes. At the same time this contact with water starts an enzymatic process which makes it easier for your metabolism to assimilate the minerals in the grain.
