Organic barley malt syrup from Eden Foods can be used in bread, bagels, beer or simply as a substitute for refined sugar and honey. Barley malt syrup is a whole grain sweetener that's about half as sweet as refined sugar and has a consistency and flavor that's similar to molasses.
Eden organic barley malt syrup is delicious over cereal and on pancakes, in popcorn balls and caramel corn. Barley malt syrup works beautifully to sweeten dark breads like pumpernickel, and to flavor baked beans. Try it drizzled over roasted or baked sweet potatoes and winter squash! Barley malt syrup can also be used for home beer brewing.
When substituting barley malt syrup for refined white or brown sugar, use 1-1/3 cups of barley malt for 1 cup of sugar, and reduce the liquid in the recipe by about 1/4 cup. Using 1/4 teaspoon of baking soda for each cup of barley malt in baking helps produce lighter baked goods.

As with true organic farming, Eden Foods' traditional organic malting process is performed without pharmaceutical, artificially produced enzymes, gibberellic acid, and potassium bromate. Eden Foods' centuries-old process uses the grain's enzymes, coupled with the knowledge and care of artisan maltsters.
To make the syrup, organic barley grain is spread out and steeped in water. After steeping is completed, the barley is allowed to germinate and sprout. During the germination process, more than 140 enzymes are created. These enzymes hydrolyze carbohydrates into sugars and break down proteins into amino acids. At just the right time, when sugar levels are optimal, the sprouted grain is kiln roasted which renders it non diastatic by stopping the enzymatic action, and the malt develops color and flavor. The grain is cured, then mashed, cooked, filtered, concentrated, and packed. This process takes 30 to 45 days.
The sugar profile of Eden organic barley malt syrup is approximately 74.5% maltose, 18.9% glucose, 2.6% sucrose, and 3.9% fructose. This barley malt syrup has 15g of carbohydrates and 8g of sugars in each 21g (1 tablespoon) serving.
If a lighter, sweeter flavor is desired, barley malt syrup can be combined with other organic grain sweeteners or organic maple syrup.
